Production

Saumweber Pure Butterfat is pure milk fat, produced from fresh cream or butter by separating water and milk protein. For Saumweber Organic Pure Butterfat we use only the best milk fat from controlled organic farming.

Application

Saumweber Pure Butterfat and Organic Pure Butterfat give chocolate products a particularly delicate melt and meet the highest demands of fine confectionery and patisserie. Ideal for everything that should taste deliciously like butter: shortcrust and yeast doughs, choux pastry, sponge cakes, butter streusels, butter stollen as well as all other butter pastries. The recommended processing temperature is approximately 20 °C.

Benefits

Due to the manufacturing process, pure butterfat is lactose-free. Saumweber Pure Butterfat is available loose in 10 kg, 25 kg, or in a 460 kg heatable disposable container. Pure butterfat is also long-lasting without refrigeration and gives all products the unmistakable, noble butter taste.
