History
Clarified butter, alongside regular butter, is one of humanity’s oldest edible fats. It was known as a precious food in many cultures. In antiquity, Romans and Greeks even used it as a remedy when mixed with herbs. By heating and clarifying, water, milk proteins, and milk sugar were removed from the butter, leaving only the pure butterfat (clarified butter), which remained shelf-stable for a longer time without refrigeration. The basis for Sonnenweg organic clarified butter is milk sourced exclusively from organically managed farms. From this milk, pure butter is produced, from which water is gently removed.
