Production

Saumweber Butterfat is pure milk fat produced from fresh cream or butter by separating water and milk protein. For Saumweber organic butterfat, we use only the best milk fat from controlled organic farming.

Application

Saumweber butterfat and organic butterfat give chocolate products a particularly delicate melt and meet the highest standards of fine confectionery and patisserie. Ideal for everything that should taste deliciously of butter: shortcrust and yeast doughs, choux pastry, Viennese, sponge batters, butter streusels, butter stollen, as well as all other butter pastries. The recommended processing temperature is about 20°C.

Benefits

Due to the manufacturing process used, butterfat is lactose-free. Saumweber butterfat is available in bulk in 10 kg, 25 kg, and in a 460 kg heated disposable container. Butterfat is also shelf-stable for a long time without refrigeration and gives all products an unmistakable, fine butter flavor.
