Production

SAUMWEBER "Clarified Butterfat" is pure milk fat which is made from fresh cream or butter by separation of water and milk protein. For SAUMWEBER "Organic Clarified Butterfat" we only use the best milk fat from controlled, organic farming.

Applications

SAUMWEBER "Clarifed Butterfat" and "Organic Clarified Butterfat" gives chocolate products a particularly delicate enamel and meets the highest demands of fine confectionery and patisserie. Ideal for everything that should taste deliciously of butter: shortcrust and yeast dough, brandy, wiener..,
sand mixes, butter crumbles, butter cakes and all other butter pastries. The recommended processing temperature is approx. 20 °C.

Advantages

By the manufacturing process used, clarified butter is lactose-free. SAUMWEBER "Clarified Butterfat" is available in bulk in 10 kg, 25 kg and a 460 kg heatable disposable container. "Clarified Butterfat" has a long shelf life even without refrigeration and gives products the unmistakable, noble butter taste.
